Guatemala Pacamara Rojo

Complexity is a funny thing. In regards to coffee we usually extol it as a virtue in that a coffee tastes, “really complex.” Anyone who has heard me on one of my many rants, however, knows that complexity in coffee is…well… complex!
Maybe a better distinction between complexity as a positive versus negative thing would be to say that there are coffees that are complex, and those that are complicated.
A complicated coffee can have a lot of different flavors or contributors to its overall experience that don’t necessarily combine well, whereas a complex coffee unfolds its disparate parts into a more unified whole- the sum being greater than each individual part.
This coffee is the latter with layers of fresh plum that hint at stone fruits, lemongrass that hints at a more herbaceous citrus acidity, and cane sugar that sort of ties it all together in a very simple and sweet way. It’s a great example of a coffee that can exist as both “comforting” and “exciting” in our lineup.
Further deepening the story of this coffee is that it is a single varietal- Red Pacamara- from a single estate in Guatemala that we have bought from for the past 5 years. It’s a truly a gem and represents a lot of work in both the prep and care of it as an agricultural export, as well as a roasted culinary experience.
A lot of things are complicated, but it’s something special to be complex. Enjoy!
