The Asman Gayo Mill (previously called the Pantan Musara mill after the villages it was surrounded by) has been investing in their quality improvement program for a while now; producing washed process coffees versus the more traditional wet-hulled coffees that Sumatra is known for. Getting a truly washed process coffee out of Sumatra is a rare thing (although it’s happening more and more), and getting a washed process Sumatra that still expresses all the wonderful things about Indonesian coffees without the defects is even rarer.

This particular cup opens up with a lot of raw chocolate (cacao for the foodies/Chocolatiers out there), a nice tart green grape acidity, and a lingering vanilla-like finish. There’s lots of iterations on these flavors as well depending on extraction. And if it seems like history is repeating itself in your cup… well maybe that’s not such a bad thing when the coffee is this interesting

“This coffee comes from a small mill in the Pegasing district of Takengon, in Sumatra's coffee-famous Aceh region. The Asman Gayo mill serves several small coffee producers within the Pantan Musara villages. Several years ago, these producers were dislocated from their homes and land because of a natural disaster, and they have rebuilt their lives and farms with a new focus on coffee.”
