Nicolás Ramirez Ramirez owns Finca Quejina, where he grows several varieties of coffee on land that has been in his family for many years. Coffee is the only crop grown for sale on Quejina where the coffee is picked ripe and depulped the same day, fermented for 18–24 hours, and then washed before being dried for 3.5–4.5 days, depending on the climate.
Long time subscribers of Rose Park will recognize this repeat offering from 2022 and beyond: Finca Quejina is a powerhouse of a coffee offering consistency, sweetness, and in this particular lot, a mouthful of buoyant tropical fruit. Loads of mango, papaya, and even a little banana come front and center with a nice honeysuckle floral note that finishes with a lingering Amaretto and oolong tea finish. A super complex coffee that encourages a multitude of cups and a nice wide brewing window to play with; we think this coffee will have you trading notes as you discover the many facets of flavor that can show up in your morning cup.
