It was suggested to me recently that we have been erring more on the side of “exciting” coffees versus “comforting” coffees lately and I think that’s mostly been true with a few important caveats.
The first one being, almost all of our coffees are “exciting” to me on some level. Genuinely. If you have a great tasting coffee (whether that’s chocolately and developed or bright and popping) it is honestly a miracle to me. It’s one of my soap boxes when we talk about coffee in our seed to cup trainings and I’m doing everything in my power right now to not get on it because I’m already running out of room for this coffee intake…
Suffice it to say, there are so many places in the coffee supply chain for coffee to go “wrong” that when you get a great cup of coffee, it’s nothing short of pure magic to me and that makes it “exciting” to me to say the least.
Case in point; this Mexico Puebla comes from a community lot put together from a bunch of small-holder farmers (anywhere from 400-600!!). The coffees are processed at a facility two hours away from Puebla to Coatepec and shipped out every two days. Because of that two day window, the fine people at APG (exporter) take into account the fermentation that starts to happen while the coffee is still in its cherry form before it gets to their fermentation tanks to soak for a quick 24 hours and then processed and dried evenly to ensure stability and and a longer “shelf life” for the green. Again, we are just talking about one piece of the this immense coffee chain and even how the coffee gets transported can make or break a cup of coffee…
Speaking of the cup, this coffee is all about light and sweetness. A nice green grape greets you with just enough acidity to illuminate the orange blossom honey and nougat-y flavors and feels like it’s there just to keep showcasing how light and sweet this coffee is. For us, that kind of emphasis on sweetness versus acidity pushes us to categorize coffees as “comforting” but as you can see, even “comforting” coffees get me excited and I think you’ll be excited to try this one and see for yourself.
